1 cup handful hickory or apple wood chips for smoking, soaked in water and drained

    Step 1 (Mix together 0.25 cup dark brown sugar, 3 tablespoons paprika, 1 tablespoon dry mustard, 1 tablespoon sea salt, 1.5 teaspoons granulated garlic powder, 1.5 teaspoons onion powder, and 0.5 teaspoon ground coriander in a bowl.)

    Step 2 (Rub 1 tablespoon vegetable oil all over 2 racks of Smithfield Extra Tender St. Louis Pork Spareribs with the membrane removed, then sprinkle the dry rub on them. Leave them at room temperature for 1 hour.)

    Step 3 (Heat a charcoal or gas grill to 230 to 250 degrees F for indirect cooking. Add 1 cup of soaked and drained hickory or apple wood chips.)

    Step 4 (Put the ribs meaty-side down on the grill over a drip pan. Cook for 2 hours, spraying 0.75 cup apple juice on both sides sometimes. Add 12 coals to a charcoal grill every 45 minutes to keep the heat steady.)

    Step 5 (Wrap each rack of ribs in heavy-duty aluminum foil and put them back on the grill. Cook over indirect heat until the ribs are tender, 1 hour 30 minutes to 3 hours.)
