check

0.25 cup thinly sliced green onions

check

0.25 cup chopped fresh cilantro, or to taste

Instructions

  • 1

Combine 1 cup potato starch, 0.25 teaspoon kosher salt, and 1 teaspoon vegetable oil in a bowl. Add boiling water a little at a time, stirring between additions, until the dough has a good texture.

  • 2

Transfer the dough to a work surface dusted with a little potato starch. Knead the dough while it's still warm, adding more potato starch if necessary, until it's smooth and elastic.

  • 3

Bring a large pot of lightly salted water to a boil. Prepare a large bowl of cold water.

  • 4

While the water is boiling, roll the dough to a thickness of 1/8 inch. Cut it into 1/4-inch noodles with a pizza cutter. Separate the noodles.

  • 5

Add the noodles to the boiling water in batches if needed. Cook until they float, about 1 minute. Transfer them to the bowl of cold water.

  • 6

Whisk together 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 2 tablespoons rice vinegar, 4 teaspoons ketchup, 0.25 teaspoon sesame oil, 1 teaspoon white sugar, and 1 tablespoon Sriracha sauce in a bowl.

  • 7

Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add 6 cloves minced garlic and cook for 15 seconds. Add 1 teaspoon red pepper flakes and 0.25 cup thinly sliced green onions; stir-fry for a few seconds.

  • 8

Add the cooked noodles to the skillet. Add the prepared sauce and stir until the noodles are coated. Cook until the noodles are heated through and the sauce starts to simmer, 1 to 2 minutes. Turn off the heat and stir in 0.25 cup chopped cilantro.

  • 9

Divide the noodles into 2 bowls and garnish with more cilantro and red pepper flakes.
