Ingredients 9
1.75 cups uncooked Arborio rice
0.5 cup unsalted butter, divided
1.5 quarts beef stock
3 tablespoons beef marrow
1 onion, thinly sliced
1 teaspoon saffron powder
0.75 cup dry white wine
salt to taste
1.5 cups grated Parmesan cheese
Instructions
-
1
Melt 0.25 cup of butter in a saucepan over low heat. Cook the sliced onion and beef marrow in the butter for 10 minutes. When the onion is soft, remove it and the marrow from the pan and set aside.

2
Put the Arborio rice in the pan and cook over medium heat for 5 to 7 minutes, stirring constantly. Add the beef stock one ladle at a time, stirring until it's absorbed. Also add the white wine in the same way. Keep doing this until the rice is almost cooked. Then stir in the saffron, remaining 0.25 cup of butter, and 0.75 cup of Parmesan cheese. Turn off the heat, cover the pan, and let it sit for 4 or 5 minutes.
