Ingredients 4
7 ripe unpeeled peaches, pitted and coarsely chopped
3 cups chopped fresh mango
2.75 cups white sugar
1 (1.75 ounce) package powdered fruit pectin
Instructions
-
1
Put half the peaches in a large pot and mash them. Add the rest of the peaches and the mangoes. Heat on medium-low until the fruit is mostly liquid. This takes 20 to 30 minutes.
-
2
Pour the mix into a bowl. Put 5 1/4 cups back into the pot, or use 5 cups for a thicker jam. Add the sugar and boil on medium heat. Stir in the pectin and boil for 1 minute. Take the pot off the heat.
-
3
Pour the jam into seven hot jars. Leave 1/4 inch of space at the top. Use a knife to remove air bubbles. Wipe the rims clean. Put the lids on and tighten the rings.
-
4
Put a rack in a large pot and fill it halfway with water. Bring it to a boil. Put the jars in the water so they are 2 inches apart. Add more water to cover the jars by 1 inch. Cover and boil for 5 minutes.
