check

check

1 cube chicken bouillon

check

1 tablespoon butter

check

0.75 (14 ounce) can coconut milk

check

2 tablespoons white sugar

check

1.5 tablespoons white sugar

check

1.5 teaspoons butter

check

1.5 cups fresh mango, cubed

Instructions

  • 1

In a bowl, whisk together the olive oil, green onions, lemon juice, soy sauce, red pepper flakes, garlic, ginger, black pepper, and salt. Add mahi mahi; toss to evenly coat. Cover the bowl with some plastic wrap and let it marinate in the fridge for 1 hour.

  • 2

Meanwhile, bring rice, water, chicken bouillon, and 1 tablespoon butter to a boil in a saucepan over high heat. Turn the heat down to medium-low, cover with a lid, and simmer until the liquid is absorbed, about 20 minutes. Pour in coconut milk and 2 tablespoons sugar; stir. Simmer without a lid until most of the coconut milk is absorbed.

  • 3

Set an oven rack in the oven's center and preheat the oven's broiler.

  • 4

Take the mahi mahi out of the marinade, shaking off any excess. Discard remaining marinade. Lay the fish flat in a single layer in a large baking dish. Broil in the preheated oven until the fish flakes easily with a fork, 10 to 15 minutes. If the fish starts browning too fast, cover the baking dish with foil.

  • 5

Meanwhile, melt 1 1/2 tablespoons sugar and 1 1/2 teaspoons butter in a skillet over medium-high heat until begins to bubble; stir in mango. Stir and cook for about 5 minutes until the mango gets tender.

  • 6

Place 1 mahi mahi fillet over 1 scoop coconut rice; top with mango salsa.
