Instructions

  • 1

Heat olive oil in a pan over medium high heat. Add the onion, salt, and lamb. Stir and cook for 8 minutes until liquid is gone. Add garlic, currants, pine nuts, cumin, coriander, cinnamon, paprika, black pepper, cayenne, and allspice. Stir for 1 minute.

  • 2

Stir in tomato sauce and water. Lower the heat to medium. Cook for 20 to 30 minutes until the mix is dry. Let the meat cool completely.

  • 3

Mix the egg, yogurt, water, and melted butter in a small bowl. Whisk it well.

  • 4

Heat the oven to 400 degrees F. Grease a round pan or a sheet pan with butter.

  • 5

Lay 2 sheets of phyllo on a flat surface. Keep other sheets under a wet towel. Brush the egg mix on top. Add 2 more sheets one by one and brush each with the egg mix.

  • 6

Put 1/3 of the lamb along one edge of the pastry. Roll it up and put it in the pan. Brush the top with the egg mix.

  • 7

Make 2 more rolls with the rest of the pastry and meat. Place them inside the first roll. Brush with egg mix and add sesame seeds on top.

  • 8

Bake for 35 to 40 minutes until the pastry is brown. Let it cool for 15 minutes.

  • 9

Mix yogurt, mint, lemon juice, and garlic. Add water until it is thin enough for dipping. Season with salt and cayenne. Cut the meat rolls into wedges and serve.
