1 small onion, chopped

check

4 cloves garlic, chopped

check

0.5 tablespoon peeled and coarsely chopped fresh ginger

check

1 cup low-sodium soy sauce, divided

check

0.25 cup rice wine

check

0.25 cup water

check

0.25 cup brown sugar

check

2 tablespoons sesame oil, divided

check

0.5 teaspoon ground black pepper

check

2 carrots, peeled and cut in chunks

check

5 radishes, peeled and cut into chunks

check

0.25 cup white sugar

check

0.5 bunch green onions, chopped, or to taste

check

1 tablespoon sesame seeds, or to taste

Instructions

  • 1

Soak ribs in a large bowl of water for 1 hour.

  • 2

Meanwhile, put the Asian pear, onion, garlic, and ginger into a blender or food processor and blend until smooth. Transfer mixture to a mixing bowl. Stir in 3/4 cup soy sauce, rice wine, water, brown sugar, 1 tablespoon sesame oil, and black pepper to make the sauce. Set aside.

  • 3

Drain the ribs and pat them dry. Trim off excess fat. Put the ribs into your pressure cooker (like an Instant Pot), then add the carrots and radishes. Pour Asian pear sauce on top. Put the lid on and lock it. Select Meat function according to manufacturer's instructions; set the timer for 35 minutes. Wait 10 to 15 minutes for the pressure to build up.

  • 4

Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock the lid and take it off. Transfer meat and vegetables to a plate and set aside.

  • 5

Turn on the Sauté setting on the Instant Pot. Stir in white sugar, remaining 1/4 cup soy sauce, and remaining 1 tablespoon sesame oil. Cook for about 10 minutes, stirring every now and then, until the sugar melts and the sauce thickens. Return ribs and vegetables to the pot; stir to coat with sauce.

  • 6

Top the ribs and veggies with green onions and sesame seeds.
