A classic European-style sponge cake. No chemical leavener, just air that is beaten into the eggs. Folding gently without deflating the batter is the most important part. Be gentle!

Ingredients 7

check

1 cup sifted cake flour

check

2 tablespoons white sugar

check

1 pinch salt

check

2 tablespoons unsalted butter, melted

check

4 eggs

check

0.5 cup white sugar

check

1.5 teaspoons vanilla extract

Instructions

  • 1

Preheat the oven to 350 degrees F (175 degrees C). Grease one 8 inch round cake pan. Line the pan with parchment paper and grease it too. Lightly flour pan and paper.

  • 2

Sift the flour, 2 tablespoons sugar, and salt together onto wax paper.

  • 3

Place the eggs into a mixing bowl set over a pan of hot (not boiling) water. Whisk the 1/2 cup sugar into the eggs until it feels warm to the touch (not hot), right around body temperature. Place the bowl onto a mixer and beat on medium speed until the mixture becomes pale yellow in color and falls off the end of the whisk attachment in long ribbons. Mix in the vanilla. Add about 1/3 of the flour mixture to the beaten egg and fold in. Keep adding the rest of the flour, gently folding after each addition.

  • 4

Place about 1 cup of the batter into the bowl containing the melted butter and combine the butter with the batter. Pour this back into the main batter and fold together. Pour the batter into the prepared pan.

  • 5

Bake right away at 350 degrees F (175 degrees C) for about 25 minutes until lightly browned on top. Cool in pan on a rack about 10 minutes and then invert onto a rack. Flip it back over onto another wire rack so it cools right side up. Let cool completely before cutting or frosting.
