Ingredients 11

check

1 (8 ounce) ball sweet pastry dough

check

1 (8 ounce) package cream cheese, room temperature

check

2 tablespoons crème fraîche

check

2 tablespoons white sugar

check

1 large egg yolk

check

0.25 teaspoon salt

check

0.25 teaspoon vanilla extract

check

0.5 teaspoon grated lemon zest

check

1 pound fresh ripe strawberries, hulled, halved

check

0.25 cup apricot jam

check

2 teaspoons water

Instructions

  • 1

Preheat the oven to 190 degrees C. Line a baking sheet with parchment paper.

  • 2

Roll out the pastry dough on a lightly floured surface to a round shape, about 12 inches across and 1/8 inch thick. Put it on the prepared baking sheet.

  • 3

Brush the edges of the dough with a little water. Curl the edge up to make it thicker and crimp it with your fingers.

  • 4

Use a fork to make small holes in the dough to stop it bubbling up during baking.

  • 5

Bake the crust in the oven until it is golden brown, which takes 20 to 25 minutes. Let it cool for 10 minutes.

  • 6

Mix the cream cheese, crème fraîche, sugar, egg yolk, salt, vanilla, and lemon zest in a bowl. Pour some of this mixture into the pastry shell.

  • 7

Put the filled tart back in the oven and bake until the cheese layer is set and the crust is browned, about 20 minutes. Let it cool completely.

  • 8

Arrange the strawberries on top of the tart, cut side down, starting with the larger ones around the edge.

  • 9

Heat the apricot jam with 2 teaspoons of water in a saucepan until it is thin enough to brush. Brush it over the strawberries and crust.
