1 cup mayonnaise

2 tablespoons tomato paste

2 tablespoons minced red onion

1 tablespoon minced green bell pepper

1 tablespoon fresh lemon juice

3 pounds russet potatoes, peeled and cut into 1/4-inch strips

4 cups olive oil for frying, or as needed

    Step 1 (Mix mayonnaise, tomato paste, onion, green pepper, red pepper, lemon juice, and salt in a bowl. Cover it with plastic wrap. Put it in the fridge for 8 hours or overnight.)

    Step 2 (Heat oil in a pot or fryer to 300 degrees F.)

    Step 3 (Put potato strips in ice water. Rinse them several times until the water is clear. Drain them and pat them dry.)

    Step 4 (Fry potatoes in batches for 5 minutes until cooked but still white. Put them on paper towels to drain. Let them cool for 30 minutes.)

    Step 5 (Heat the oil to 375 degrees F. Fry the potatoes again for 5 to 10 minutes until they are golden brown. Drain them and add salt. Serve with the sauce.)
