Instructions

  • 1

Mix 1 pound pork belly with 2 teaspoons Chinese cooking wine, 1 teaspoon oyster sauce, 1 teaspoon cornstarch, 0.5 teaspoon sesame oil, 0.25 teaspoon salt, and 1 pinch ground black pepper. Refrigerate for at least 20 minutes.

  • 2

Heat 1 teaspoon vegetable oil in a pot over medium-high heat. Add 1 tablespoon minced garlic and 0.5 tablespoon fried shallots. Cook until fragrant, about 1 minute. Add the pork and cook until browned, about 6 minutes. Add 3 cups water, 1 tablespoon light soy sauce, and 0.25 teaspoon dark soy sauce. Cover and bring to a boil. Reduce heat to medium and cook until the pork is tender and the water is reduced by half, about 30 minutes.

  • 3

Cut 0.25 pound shrimp into 3/4-inch pieces. Mix 1 tablespoon cornstarch and 3 tablespoons water in a bowl.

  • 4

Bring the stew to a boil. Add the shrimp and 2 tablespoons frozen peas. Cook until the shrimp changes color, about 2 minutes. Stir in the cornstarch mixture. Cook until the gravy thickens, 7 to 10 minutes.

  • 5

Heat 2 tablespoons vegetable oil in a wok over medium-high heat. Cook 2 tablespoons minced garlic until fragrant, about 1 minute. Add 2 cups cooked jasmine rice. Break up the rice with a spatula and cook until loosened, 3 to 5 minutes. Add 1 teaspoon oyster sauce and 1 teaspoon light soy sauce. Cook until the rice is fluffy and heated through, about 3 minutes. Add 3 drops sesame oil.

  • 6

Divide the fried rice between 3 or 4 bowls. Pour the pork and shrimp stew over the rice.
