1 tablespoon freshly ground black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
0.5 teaspoon dried oregano
1 teaspoon smoked paprika
Instructions
-
1
Set your oven to 450 degrees F (230 degrees C).

2
Dry the turkey with a paper towel. Put it in a baking dish. Poke holes in the skin with a small knife. Rub it with olive oil. Let it sit for 15 to 20 minutes.

3
Mix the salt, pepper, thyme, rosemary, oregano, and paprika in a bowl.
-
4
Put the spice mix all over the turkey. Make sure the skin is on top.
-

Pour 1/2 inch of water into the bottom of the dish.

7
Let the meat cool. Put it in the fridge for 8 hours or overnight. Slice it thin.
