  • 1

Heat 2 tablespoons of olive oil in a large pan over medium heat. Cook 1 chopped onion and 4 minced garlic cloves until the onion is transparent. Add 1.5 pounds cubed sirloin tips and cook until browned. Then add 1 chopped red bell pepper, 2 bay leaves, 0.5 teaspoon ground cumin, and 1 teaspoon dried oregano. Cook for 2 to 3 minutes.

  • 2

Add 0.5 cup dry sherry, 1 (8 ounce) can tomato sauce, 2 tablespoons red wine vinegar, 0.25 cup pimento-stuffed green olives, 0.25 cup raisins, and 2 tablespoons capers. Pour in enough water to just cover the meat. Bring to a boil, then reduce the heat to low and cover. Simmer for about 1 1/2 hours until the meat is tender. Add more water if the stew becomes too thick.

  • 3

Add 4 peeled and quartered potatoes to the stew. Season with salt and pepper to taste. Cook covered until the potatoes are almost tender, then uncover and cook until they are done.
