Ingredients 9
1 (9 inch) unbaked pie crust
1 (14 ounce) can coconut milk
1 cup milk
1 cup white sugar
1 cup water
0.5 cup cornstarch
1.25 cups semi-sweet chocolate chips
1.5 cups heavy cream
0.25 cup white sugar
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust in your preheated oven until it turns golden brown, about 15 minutes. Remove from the oven and cool.
-
2
In a medium saucepan, whisk together the milk, coconut milk, and 1 cup sugar. Mix water and cornstarch in a separate bowl until smooth. Bring the coconut mixture to a boil, turn heat down to a simmer, and slowly whisk in the cornstarch mixture. Continue stirring over low heat until thickened, about 3 minutes.
-
3
Put chocolate chips in a microwave-safe bowl and microwave for about 1 minute until melted. Divide coconut pudding evenly into two bowls. Stir the chocolate into one portion, then spread it over the bottom of the pie crust. Pour the remaining portion of pudding on top of the chocolate and spread smooth. Put the pie in the fridge to chill for about 1 hour.
-
4
Beat cream in a chilled glass or metal bowl with an electric mixer until frothy. Slowly add the sugar, beating it until soft peaks start to form. Layer the cream on top of pie.
