Ingredients 16

check

2 tablespoons olive oil

check

1 large onion, diced

check

0.5 cup sliced fresh mushrooms

check

1 teaspoon salt, or more to taste

check

1 cup diced red bell pepper

check

1 jalapeno pepper, seeded and sliced

check

1 teaspoon cumin

check

0.5 teaspoon paprika

check

0.5 teaspoon ground turmeric

check

0.5 teaspoon freshly ground black pepper, plus more to taste

check

0.25 teaspoon cayenne pepper

check

1 (28 ounce) can crushed San Marzano tomatoes, or other high-quality plum tomatoes

check

0.5 cup water, or more as needed

check

6 large eggs

check

2 tablespoons crumbled feta cheese

check

2 tablespoons chopped fresh parsley

Instructions

  • 1

Heat olive oil in a large, heavy skillet over medium-high heat. Add the mushrooms and onion, then season with salt. Cook and stir until mushrooms release all of their liquid and start to brown, about 10 minutes.

  • 2

Toss in the bell pepper and jalapeño. Cook and stir until peppers begin to soften, about 5 minutes. Season with paprika, cumin, turmeric, black pepper, and cayenne. Cook and stir to blend the flavors, about 1 minute.

  • 3

Pour in the tomatoes and water and stir. Reduce heat to medium. Simmer uncovered, stirring now and then, until the vegetables are sweet and softened, 15 to 20 minutes. Add more water if sauce becomes too thick.

  • 4

Use a big spoon to make a little well in the sauce for each egg. Crack an egg into a small ramekin and slide gently into an indentation; repeat with remaining eggs. Season the eggs with salt and pepper. Cover and cook until eggs reach desired doneness.

  • 5

Top with feta cheese and some parsley to serve.
