Bialys

Bialys are a type of bread that is similar to bagels but lighter in texture. They are filled with a savory onion and poppy seed mixture.

The dough is allowed to rise for a long time, which gives the bialys a unique taste.

The filling is made by cooking onions until they are soft and golden brown, then mixing them with other ingredients.

Bialys are baked in a hot oven until they are puffed and browned.

Instructions

  • 1

Combine 3.75 cups bread flour, 0.5 teaspoon instant yeast, 1.5 teaspoons kosher salt, and 1.5 cups water in a bowl. Stir with a wooden spoon until the dough is wet and sticky. Cover and leave at room temperature for at least 12 hours.

  • 2

Heat 1 tablespoon olive oil in a skillet over medium heat. Add 1 large diced yellow onion and 0.5 teaspoon kosher salt. Cook until the onion is soft and golden brown, about 10 minutes. Turn off the heat and add 1 tablespoon bread crumbs, 2 teaspoons poppy seeds, 1 tablespoon sliced green onion, and 1 pinch cayenne pepper. Stir to combine and let cool.

  • 3

Uncover the dough and scrape it onto a floured surface. Divide it into 8 equal portions and roll each into a ball. Place on a baking sheet lined with floured parchment paper. Dust with flour and cover with a towel. Let proof until doubled in size, 45 to 60 minutes.

  • 4

Preheat the oven to 500 degrees F (260 degrees C).

  • 5

Flour your fingers and shape each dough ball into a ring. Make the center thin and the edges thicker.

  • 6

Fill the center of each ring with no more than a rounded teaspoon of onion-poppy seed filling. Spray with cold water and sprinkle with poppy seeds.

  • 7

Bake in the preheated oven until puffed and browned, about 12 minutes. Transfer to a wire rack and cool for 20 minutes before serving.
