Instructions

  • 1

Heat a paella pan over medium-high heat and add 1 tablespoon olive oil. Add 0.5 (4 pound) whole chicken cut into 6 pieces, 0.5 (2 pound) rabbit cleaned and cut into pieces, and 1 head garlic with cloves separated and peeled. Cook until the meat is browned. Move the meat to the sides and add 1 medium tomato finely chopped, 1 (15.5 ounce) can butter beans, 0.5 (10 ounce) package frozen green peas, and 0.5 (10 ounce) package frozen green beans. Season with 1 teaspoon mild paprika.

  • 2

Add water to the paella pan until it's almost full, measuring the amount. Bring to a boil and simmer for 1 hour to make a broth.

  • 3

Add salt, a pinch of saffron threads, a pinch of dried thyme, and a pinch of dried rosemary. Stir in 3 cups short-grain white rice, which is half the amount of water used. Cover, reduce heat to low, and simmer for 20 minutes until the liquid is absorbed.
