4 whole (12 ounce) trout, cleaned with tails and heads on

3 tablespoons olive oil

0.5 cup all-purpose flour

2 lemons - cut into wedges, for garnish

    Step 1 (Remove the gills from the trout. Rinse the fish under cold water.)

    Step 2 (Put olive oil in a large pan. Heat it over medium heat.)

    Step 3 (Mix flour, cornmeal, salt, black pepper, and cayenne in a shallow dish. Turn the heat to high. Coat the fish in the mixture.)

    Step 4 (Fry the fish for 4 to 6 minutes on each side. It should flake with a fork. Serve with lemon.)
