Ingredients 22
1 (3 pound) boneless pork loin roast
5 teaspoons kosher salt
2 tablespoons olive oil
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
0.25 teaspoon cayenne pepper
0.5 teaspoon ground cinnamon
0.25 teaspoon ground cloves
0.25 teaspoon ground allspice
3 tablespoons honey, or as needed
8 baby potatoes
2 carrots, cut into 2-inch chunks
2 Anaheim chile peppers, halved and seeded
1 red onion, roughly chopped
2 tablespoons olive oil
salt to taste
0.5 cup plain Greek yogurt
2 tablespoons thinly sliced fresh mint
1 clove garlic, finely crushed
Instructions
-
1
Cut the pork loin almost all the way through, starting on the thinnest side, and open it up like a book. Make sure not to cut all the way through.
-
2
Season the pork with 5 teaspoons of kosher salt on both sides and let it sit at room temperature for 30 to 45 minutes, or in the fridge for 2 to 3 hours.
-
3
Preheat the oven to 350 degrees F. Grease a roasting pan with 2 tablespoons of olive oil and pat the pork dry with a paper towel.
-
4
Mix cumin, coriander, ginger, black pepper, smoked paprika, cayenne, cinnamon, cloves, allspice, and 3 tablespoons of honey in a bowl. Spread half of the spice mixture inside the pork, fold it back together, and spread the remaining mixture on the surface. Tie the loin with kitchen string.
-
5
Toss 8 baby potatoes, 2 carrots cut into 2-inch chunks, 2 Anaheim chile peppers halved and seeded, and 1 red onion roughly chopped with 2 tablespoons of olive oil and salt in a bowl.
-
6
Place the pork in the prepared roasting pan and surround it with the vegetable mixture.
-
7
Roast in the preheated oven until the internal temperature of the pork reaches 140 to 145 degrees F, about 1 hour and 15 minutes. Remove from the oven and turn the roast over in the pan drippings. Let it rest for 15 minutes.
-
8
Increase the oven temperature to 425 degrees F. Toss the vegetable mixture in the pan drippings and return to the oven for 10 minutes.
-
9
Combine 0.5 cup of plain Greek yogurt, 2 tablespoons of thinly sliced fresh mint, and 1 clove of finely crushed garlic in a bowl for the sauce.
-
10
Remove the strings from the roast, slice it, and serve with the vegetables and yogurt sauce, spooning some pan drippings over the top.
