Ingredients 9

check

1 (5 pound) unsmoked bone-in ham

check

1 teaspoon salt, or to taste

check

5 pounds russet potatoes, peeled and shredded

check

4 cups all-purpose flour

check

1.5 cups stone ground whole wheat flour

check

1 teaspoon baking powder

check

1 teaspoon salt, or to taste

check

3 slices bacon, cut into 1-inch square pieces

check

1 pinch salt and black pepper to taste

Instructions

  • 1

Put the ham in a large pot with 16 to 20 cups of water. Boil the water and then simmer the ham for 2 hours. Take the ham out and skim the foam off the top. Add 1 teaspoon of salt if you want.

  • 2

Put peeled and shredded potatoes in a big bowl. Use wet hands to mix in all-purpose flour, whole wheat flour, baking powder, and 1 teaspoon of salt. Stir until you have a sticky dough.

  • 3

Bring the ham soup to a boil. Use wet hands to take 2/3 cup of dough. Put a piece of bacon in the center. Roll it into a ball about 2.5 inches wide. Slide the ball into the broth near the side of the pot. Do this for all the dough.

  • 4

Cover the pot and simmer on low heat for 15 minutes. Gently lift any dumplings stuck to the bottom. Cover the pot again and simmer for 1 hour. The dumplings will float.

  • 5

Use a slotted spoon to put the dumplings in a bowl. Add salt and pepper before you eat.
