20 cups water
1 (2 to 3 pound) whole chicken
0.5 white onion, chopped
2 large carrots, chopped
2 celery ribs, chopped
6 large leeks, cut into 1-inch chunks, or more to taste

1 teaspoon ground cloves
1 teaspoon salt

Step 1 (Put 20 cups of water in a large pot and bring it to a boil. Add a whole chicken (2 to 3 pounds) and cook until it's done, about 1 hour. The chicken is done when it's not pink and the juices run clear. The temperature should be at least 165 degrees F.)

Step 2 (Take the chicken out of the pot and let it cool. Remove the skin and pull the meat off the bones. Put the bones back in the pot. Add 0.5 chopped onion, 2 chopped carrots, and 2 chopped celery ribs. Boil for about 1 hour.)
